I tried making saba miso some 12-13 years ago after watching “that” show, and at that time I didn’t do the yubiki part you demonstrated; and ended up with that “aquarium” smell you mentioned.

Thanks for demonstrating this, i guess I’ll give it another shot since my wife loves simmered or steamed fish.
